Buttermilk Potato Salad

Potato salad is one of those recipes I’ve made more times than I can count, and I’ll tell you right now – I usually go for the creamy kind. The kind that’s smooth, well mixed and full of that classic flavor everybody expects. But now and then, I like to switch things up just a bit, and this buttermilk potato salad is one I keep coming back to.

This one’s a little different, and that’s what makes it so good. Instead of everything creamed together, you’ve got nice chunks of potatoes in every bite. They’re tender but still hold their shape, giving the whole dish a heartier feel. It’s just enough of a change to make you notice without straying too far from what you love.
