Eggs have developed an undeserved reputation. For the past decade, recommendations cautioned avoidance of eggs and their high cholesterol. We recently learned that this was not necessary. The effects of dietary cholesterol on blood cholesterol are complicated; however, we now know that total blood cholesterol is not as serious a risk factor for heart disease as once thought. Eggs are actually a super protein, packed with essential nutrients and very low in calories.

Since the 1960s, we’ve preached that foods high in cholesterol significantly impacted cholesterol blood levels and increased risk for heart disease. After 25 years of research, science has demonstrated that dietary cholesterol is a nutrient and that we don’t have to be concerned with its overconsumption.
