Copeland told Lake Martin-Dadeville Area Kiwanis Club members he did not want to work for the federal government, so he decided to look at routes that aligned with his passions. Cycling and gardening are a few examples, but he decided to take his love for cooking to the next level. He said in retirement he wanted to have fun and he wanted to learn.
